Berry Nice Breakfast Crumble

Crumbles are my favourite desserts so when I recently had some apples to use up I thought ‘why not eat it for breakfast’, after all, it is fruit and oats. So I did and it was so delicious that I will do it again.

It is crunchy and fruity and just the perfect breakfast on a cold morning. I like to have it with coconut yoghurt and you can mix up the fruit, maybe using different types of berries or adding rhubarb. The added bonus is that this recipe is pretty healthy as there’s fruit adding husks and flaxseeds will give you a superfood boost. Fun fact: in the 8th century, King Charlemagne believed so strongly in the health benefits of flaxseed that he passed laws requiring his subjects to consume it.

I love to eat this whilst snuggled under a blanket. Here’s the recipe so you can too!

Base
Apples (6 is more than enough), cored and cut into 2 cm dice (I remove the skin but you can keep the skin on for extra chewiness)
Fresh or ¾ cup frozen blueberries
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
Juice of 1/2 a lemon
Vanilla essence

Topping
1/2 cup psyllium husks
1 cup rolled oats
1/2 cup chickpea flour
2 tablespoons coconut sugar
½ cup coconut oil
½ cup chopped nuts
1 teaspoon flaxseed
coconut yoghurt to serve
